Gluten-free banana pancakes

Because pancakes are life, here is my recipe - gluten and lactose free -


Ingredients for 10 to 12 pancakes

  • 2 very ripe bananas 🍌
  • 2 eggs 🥚
  • 220g flour (170g rice flour + 50g buckwheat flour)
  • 1.5 tsp yeast
  • 1 pinch of salt
  • cinnamon
  • 180ml of almond milk 🥛


Preparation :

  1. In a salad bowl, mash the bananas
  2. Add the eggs and mix.
  3. In another bowl, mix all the dry ingredients (flour, salt and yeast)
  4. Add this mixture to the bananas + eggs
  5. Finish by pouring in the almond milk, mix and let the batter rest for at least 20 minutes before cooking the pancakes.
  6. Cook the pancakes in a pan with a dab of coconut oil or butter.

And there you have it! Personally, I'm not mad at butter, and I enjoy these pancakes with salted butter and maple syrup. And you, how do you like your pancakes served?
